It is a little late — but here is my weekly wrap up for this past week. You can sure tell that it is getting close to the holidays. The stores and malls are super busy, as is every person in town, myself included. We had to do some travelling this week for a funeral and specialist appt, but I still managed to get my 5 posts done — if not up on time. Check out what I did this week below.
Blueberry Zucchini Muffins — These blueberry delights give you a mouthful of blueberry deliciousness in every bite. Chock-full of blueberries and zucchini they make for a healthy breakfast addition or snack. Be careful not to leave the lid open, or they will get sticky tops, and go bad quick.
Puffy Paint Window Decorations — So far my least favourite, and probably most disappointing craft. They turned out okay, but they took a long time (mostly due to the frustration of peeling them off the wax paper). Also they seem like a one time use kinda of decoration. I might suggest to use different paint and hope you fair better.
Greek Marinated Chicken — This was one I had stored in my back pocket for a no time kind of day. This chicken comes out of the oven tasting like a delicious chicken souvlaki. Quick, and easy — I plan on trying to make it into a freezer meal.
Stuffed Sole — I was amazed at how flavourful this fish turned out. It doesn’t have too many ingredients, but it tastes like a party in your mouth. The hardest part is wrapping up the stuffing into the sole, but smooth sailing from there if you have success. I highly recommend this dish.
Chicken Zucchini Meatballs — Another recipe I recommend. These meatballs are basic, but oh so good. Top them with just a little spaghetti sauce and fresh basil and mmm mmm delicious. Nothing like a good homemade meatball to warm the depths of your belly!
I didn’t get to as many Christmas related things as I had hoped this week. But next week I am hoping to make at least 2 or 3.
Also I want to announce that this coming week will be my last 5 pin week until Jan. I will still be making things — but I will store them up and blog about them when I can.
