I know I already did a post today — but technically that was just a follow-up to yesterdays pin. Originally I planned on a recipe for today, and since the Christmas Cone Tree didn’t take too long, I decided to go for it. So today I made Honey Lime Shrimp.
So I really need to learn to read the recipe at least a day in advance so I can be prepared, instead of finding out too late that I need to marinate the food. Once again I had failed to miss this point when I first looked at the recipe. I also forgot to take the shrimp out of the freezer with plenty of time to thaw. Today was just an off day. But without further ado … here is my take on the Honey Lime Shrimp.
Shortly after I pulled out all the ingredients and set them on the counter for the pic, I realized this combination looked vaguely familiar. Then I realized what it was … the combination for the marinade was the exact same as the Honey Lime Tilapia. And just like the tilapia I needed to marinate it for 30-60 mins. Oops.
Mix up your marinade, and throw it all in a ziplock bag with the shrimp. Toss int he fridge for 30-60 mins and time to cook.
I used a slotted spoon to strain the shrimp from the marinade, and heated in pan until cooked. Unfortunately I overcooked the shrimp though. 😦
I have to admit — that even though the shrimp was overcooked, it tasted amazing. This marinade seems to work on a variety of fish.
