Mmmm Mmmm Good … It Monday!

The day is finally here. Today I officially start my challenge and I thought what a better way to start than with something sweet and delicious. We all know the bad rap that Mondays have, back to work after the weekend that flew by. So I decided to give Monday’s a new twist, going forward I’m going to try to make something mmmm mmmm good.

For this Mmm Mmm Monday I decided to try Banana Oat Greek Yogurt Muffins. I already have a pretty sweet banana muffin recipe which I swear by, and no other muffin recipe can really compare. This makes me apprehensive when trying a new one, because I rarely enjoy them (comparatively) even though my hubby and friends never complain. But as I am branching out and trying new things, why not try this as the title makes it sound amazing!!

So here’s to trying new things. Without further ado – Banana Oat Greek Yogurt Muffins, as found on my Sweets & Treats board.

I gathered all the ingredients together and something that drew me to this particular recipe was the lack of flour. For more than a year I’ve been trying to bake/cook without flour and when I use it I’ve turned to brown rice flour. This recipe uses oats in the place of any flour.

The other thing unique about this recipe is that everything is thrown into blender and whipped together. This made everything super easy, and clean up was a breeze! Throw everything into the blender, whip until smooth, and hand mix in chocolate chips.

It was also super easy to pour straight into the muffin tray, which I had sprayed with cooking spray. Typically I use muffin cups, but this recipe recommended using cooking spray because they stick even to muffin cups. Finally, pop into the oven for 15-20 mins and voila … Done.

When I pulled them out of the tray, the original recipe author was absolutely correct — they were somewhat difficult to pull out. Even after spraying the tray they stuck like crazy, but nothing a little knife around the edge couldn’t fix.

The first thing I noticed about them was how light and fluffy they were. Then like every good baker, one must try their finished product. I was happily surprised by the deliciously moist, chocolatey goodness. The only down-side to this recipe is that the blended consistency is a little too thin for the weight of the chocolate chips as they all sank to the bottom.

Overall a hit in my books. Now to test them out on my hubby 🙂
